His Sydney Greenhouse was the first to have our sparkling mineral water on tap and Joost remembers getting the phone call from Mitch early last year when, for the first time, they sold more mineral water in kegs than in individual bottles (in just three years since being introduced!).
The Sydney Greenhouse also used it to make tonic water, using wild harvested Quinine bark sourced from the Amazon as well as house made lemonade and in their sourdough breads.
